Upstairs Cocktail
The Juice of 1/4 Lemon. (Still out of lemons, so I used the juice 1/2 Lime)
1 glass Dubonnet. (2 oz Dubonnet Rouge)
Use medium size glass and fill with soda water.

This is actually a fairly refreshing cocktail, the added zest of the lime gives some interest. Nice for hot weather, I would say.

As I approach the “Fizz” section of the Savoy Cocktail Book, the “Soda Water” question is starting to eat away at me.

For most of the last several years, I’ve used an iSi Soda Siphon for my soda water. It works OK and is cheaper than buying bottles of Soda Water. Besides, the filtered Hetch Hetchy water I use tastes better than a lot of the rather salty stuff you get in commercial Selzer or Soda.

Some others of my friends have recommended the Soda Stream system as superior to the iSi Soda Siphon.

Maybe it is based on a youth mis-spent watching Three Stooges movies in bank basements, but I just think a Siphon is more fun to use than pouring Selzer out of a bottle with a screw on top.

  1. i also use the iSi soda siphon with fresh from the tap chicago city water. my only complaint is that the iSi doesn’t seem to get as much carbonation into the water as I would like.

    a friend of mine has the Soda Stream, and just tinkering around with it, you can really pump it up with carbonation — a nice feature compared to the iSi

  2. We actually had an iSi soda siphon when I was a kid that we used to make sparkling cranberry juice and the like. I now have a Soda Stream that was picked out to replace all the bottled selzer we were buying rather than specifically for making cocktails. The Soda Stream wins in convenience over the iSi for me because of the ability to use multiple bottles and not have to worry about cartridges. I do like how the old glass and mesh soda siphons look, but the Soda Stream is still my favorite all-around.

  3. Siphons are way cooler, but I have a Soda Stream for price and convenience. The Girlfriend and I tend to drink a lot of soda water, so having multiple bottles around is really nice. I also suspect the Soda Stream could be used to carbonate non-water things (!!), but the literature that comes with the machine discourages it.

  4. Yes I am also disappointed with the amount of carbonation from the iSi. I think I might have a problem with creating a good enough seal when screwing the top on. Anyone else have that problem?

  5. I buy small bottles of Crystal Geyser for drinks and finish off the balance neat. Starting to think about a system of some kind, though.

  6. I’m a big fan of the Soda Stream. I don’t know how much the iSi is, but each SS carbonator makes I think 60 liters of soda. The system is $100 and comes with 2 carbonators. The bottles are functional but look kind of lame. If I was to buy it again I would pony up $200 for the upgraded Penguin version just for the classiness of the glass bottles.

  7. I have both an iSi and a Genesis model sodastream. I use the latter far more often because as mentioned above one can adjust the the level of carbonation but also because of cost and convenience. The iSi is nice as it adds a bit of flair to the process of making a cocktail as opposed to simply pouring from the rather clunky sodastream bottles. I have a number of friends who have the Penguin model, and while the glass bottles are quite nice, they are smaller than those used with the Genesis model and they don’t seem to hold the carbonation as well even for short periods. I haven’t tested this side by side though against the Genesis produced bottles, it’s an impression we have had when using the different systems. One thing be sure to used filtered water; even water from municipal systems using a very minimal amount of chlorine when carbonated with a sodastream tend to get a very strong chlorine taste in the resulting water; running the water through even a simple brita or pur -like filter before carbonating eliminates this problem.
