The Defend Arrack


Before heading to work the other day, I was reading through Rogue and Beta Cocktails, looking for some improvements to my “Whiskey, Spirituous” game, and glanced at The Defend Arrack by Maksym Pazuniak. Looked cool, but whenever am I going to get a chance to make a, “Batavia Arrack, Bartender’s Choice”?

But then a bartender type came in Monday night, relatively new to the game, and asked if he could try Batavia Arrack, “…and maybe could I make him a cocktail?”

What sort of bizarre coincidence is this?

Well, then!

The Defend Arrack

1 1/2 oz Batavia Arrack
3/4 oz Marie Brizard Apry
3/4 oz lime Juice
1/8 oz St. Elizabeth’s Allspice Dram
Orange twist (garnish)

Shake and strain into a chilled cocktail glass. Express the oil from one orange twist onto the surface of the drink and discard.

“Batavia Arrack is a challenging spirit. Funky and pungent, this doesn’t mix easily. When encountering an animal like this, I like to turn to Apry, a magic liqueur that has an uncanny ability to reign in and blend disparate flavors. /Maks”

Note, Apry has been a bit thin on the ground in California recently, so I used the Rothman & Winter Apricot Liqueur. I found I needed to up the amount slightly, as it is not quite as assertive as the Apry is. Nothing near an ounce, but a generous 3/4 oz. Your Mileage May Vary.

Do give that a nice vigorous shake, as well.

I believe you will be surprised how, as the nouveau bartender put it, “more-ish” this seemingly unlikely combination proves to be.

3 Glasses Jamaica Rum. (1 1/2 oz Appleton V/X)
1 1/2 Glasses Kummel. (3/4 oz Gilka Kaiser Kummel)
1 1/2 Glasses Orange Juice. (3/4 oz fresh Orange Juice)
1 Dash Pimento Dram. (Very Little St. Elizabeth’s Allspice Dram)

Shake carefully and serve whilst, frothing.

The unique taste of this cocktail is due to Kummel mixed with a liqueur known as Pimento Dram (a Jamaican Liqueur) without which it would lose all its direction.

I had feared this might be rather over sweet. But it isn’t really. Perhaps due to some nicely tart Valencia Oranges. I liked it quite a bit, but then I am fond of caraway flavors. I was enjoying it so much, I gave a taste to Mrs. Flannestad, who got a very puzzled look on her face. So perhaps it isn’t a crowd pleaser.

Balm Cocktail

(6 People)

1/2 Glass Orange Juice. (1/2 oz fresh squeezed)
1/2 Glass Cointreau (1/2 oz)
3 Glasses sherry. (3 oz Lustau Don Nuno Dry Oloroso)
1 Dash Orange Bitters. (Regan’s)
2 Dashes Pimento Dram liqueur. (Homemade)

Fill up the shaker with cracked ice shake and serve with an olive.

The olive garnish doesn’t make any sense to me. Also not sure if this is the appropriate Sherry. But, I’m still coming to terms with Dry Sherries.

In any case, this isn’t a bad cocktail, if you like orange, spice, and sherry. Just isn’t quite as short and sharp as a the usual liquor based cocktails. A pleasant appetizer cocktail.

Alexander’s Jamaican Cousin

A while ago I posted the series of Alexander Cocktails: Alexander Cocktail (No. 1), Alexander Cocktail (No. 2), and Alexander’s Sister.

I didn’t post an original cocktail of my own, that I liked best of the bunch. Sorry, Mr. Craddock, we always love our children the best.

But, since Marleigh over at Sloshed! is posting about the Brandy Alexander, I figure I might as well put it up.

Alexander’s Jamaican Cousin

1 1/2 oz Flavorful Dark Rum
3/4 oz Pimento Dram (Jamaican Allspice Liqueur)
3/4 oz Cream

Shake well and strain into a cocktail glass. Grate on some fresh nutmeg.
